For a deeper flavor, try browning the vegetables in batches.
If you don't have browning sauce, a tablespoon of Worcestershire sauce can be substituted.

This soup tastes even better the next day, as the flavors have time to meld.
To make this recipe vegan, use vegetable broth instead of chicken stock.
