Step

Soak the Rice: Place wild rice in a bowl and cover with water. Let it soak for at least 4 hours, or preferably overnight. Drain well. (Soak: 4-12 hours)

Simmer the Rice: In a stockpot, combine the drained wild rice with 1 teaspoon of Celtic sea salt and about 3 cups of chicken broth. Bring to a boil, then reduce the heat to medium-low. Cover and simmer until the rice is tender. (Simmer: 30-40 minutes)

Sauté the Turkey and Vegetables: While the rice simmers, heat coconut oil in a large skillet over medium heat. Add the turkey, onion, carrots, and celery. Cook, stirring occasionally, until the turkey is cooked through and the vegetables are slightly tender. Add the frozen okra and cook until thawed, seasoning with the remaining 1 teaspoon of Celtic sea salt, white pepper, and black pepper. (Sauté: 15-22 minutes)

Combine and Slow Cook: Transfer the cooked wild rice, turkey and vegetable mixture, jalapeno peppers, hot sauce, and remaining chicken broth to a slow cooker.

Cook on High: Cook on High for 1 hour to allow the flavors to meld. (Slow Cook: 60 minutes)

For a richer flavor, consider using homemade chicken broth.
If you don't have wild turkey, substitute with regular turkey breast or even chicken.
Adjust the amount of jalapeno peppers and hot sauce to your preferred level of spiciness.
Gumbo is even better the next day, as the flavors have more time to meld together.
