Follow The Directions

01

Step

Strain the turkey drippings through a fine-mesh sieve into a large saucepan. Reserve 1 cup of the strained drippings in a separate bowl. (5 minutes)

02

Step

In the saucepan, combine the remaining drippings with the white wine, crushed rosemary, and black pepper. Bring the mixture to a gentle simmer over medium-low heat. (2 minutes)

03

Step

Allow the gravy to simmer for approximately 20 minutes, stirring occasionally, to allow the alcohol to evaporate and the flavors to meld together beautifully. (20 minutes)

04

Step

In the reserved bowl of drippings, whisk in the cornstarch until completely smooth and free of lumps. (1 minute)

05

Step

Slowly drizzle the cornstarch slurry into the simmering gravy, whisking constantly to prevent lumps from forming. (2 minutes)

06

Step

Continue to simmer the gravy, whisking frequently, until it has thickened to your desired consistency, about 3 minutes. (3 minutes)

07

Step

Season the gravy with salt to taste. For a smoother texture, strain the gravy through a fine-mesh sieve to remove any large pieces of rosemary before serving. (2 minutes)

For an even richer flavor, consider using a homemade turkey stock in addition to the drippings.
If you prefer a thicker gravy, gradually add more cornstarch slurry until you reach your desired consistency.
Fresh rosemary can be used in place of dried rosemary. Use about 2 tablespoons of finely chopped fresh rosemary.
Adjust the amount of black pepper to your preference. A pinch of cayenne pepper can also add a subtle kick.
