For a richer flavor, sear the pork chops in a skillet with a little oil before adding them to the slow cooker. If you don't have fresh mushrooms, you can use 4 ounces of canned sliced mushrooms, drained. Add a splash of dry sherry or white wine to the slow cooker for extra depth of flavor. To thicken the sauce at the end of cooking, remove the pork chops and stir in a slurry of 1 tablespoon cornstarch mixed with 2 tablespoons cold water. Cook on High for 15-20 minutes, or until thickened.
