For a richer flavor, use dark brown sugar. If you don't have apricot preserves, peach preserves or orange marmalade can be substituted. To add a little heat, a pinch of cayenne pepper can be added to the sauce. Fresh sweet potatoes can be used in place of canned. Simply peel, cube, and parboil until slightly tender before adding to the sauce.
