For a smoother sauce, use a hand blender or whisk vigorously to eliminate any lumps from the apricot preserves.
If you don't have apricot preserves, peach or orange marmalade also work well.
Feel free to adjust the amount of Dijon mustard to your preference for tanginess.
For a richer flavor, try searing the pork chops in butter instead of olive oil.
