For an extra layer of flavor, try using ghee (clarified butter) instead of regular butter for cooking the roti canai. Feel free to adjust the level of spiciness in the curried lentil dip by adding more or less cayenne pepper, or by omitting the serrano pepper. If you don't have time to make the dip, the roti canai are also delicious served with a simple curry sauce or even just plain with a sprinkle of salt. Make sure your pan is hot enough before cooking. If it’s too cold, it will take long time to get the browning and flaky outside.
