For a more intense lime flavor, consider adding the zest of one lime to the simple syrup while it's cooling. If you don't have a blender, a food processor can also be used to puree the ingredients. To prevent ice crystals from forming, try adding a tablespoon of vodka or another clear spirit to the sorbet base before freezing. The alcohol will lower the freezing point and result in a smoother texture.
