Follow The Directions

01

Step
10 mins

Prepare the Cucumbers: Peel the cucumbers if desired (leaving some skin on adds texture). Halve them lengthwise and use a spoon to remove the seeds. Thinly slice the cucumbers into 1/4-inch thick half-moons. (10 minutes)

02

Step
5 mins

Make the Dressing: In a medium bowl, whisk together the rice wine vinegar, sugar, and soy sauce until the sugar is completely dissolved. (5 minutes)

03

Step
2 mins

Marinate: Add the sliced cucumbers to the dressing and stir gently to coat evenly. (2 minutes)

04

Step
2 hrs

Chill: Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld. (120 minutes)

05

Step
2 mins

Serve: Before serving, sprinkle with toasted sesame seeds. Serve cold and enjoy!

For a deeper sesame flavor, add a teaspoon of sesame oil to the dressing.
If you don't have time to chill the salad for 2 hours, even 30 minutes will make a difference.
Feel free to adjust the amount of sugar to your liking, depending on the sweetness of your cucumbers.
A pinch of red pepper flakes can add a subtle kick to the salad.

Make sure to use a mandoline or a very sharp knife to get the cucumbers thinly sliced.

I grated a small piece of ginger into the dressing for an extra layer of flavor.
