Caramelize Pears and Onions: In a large skillet, melt the butter with the remaining 1/4 cup of olive oil over medium-high heat. Add the onion wedges and pear wedges to the skillet, working in batches if necessary to avoid overcrowding. Cook, stirring occasionally, until the onions and pears are browned on all sides but still hold their shape, about 8-10 minutes. Reduce the heat to low, and continue to cook for another 5-7 minutes, or until the onions are softened and translucent and the pears are tender. Stir in the balsamic reduction and salt. Keep warm. (13-17 minutes)
