For a richer flavor, consider using brown butter. Cook the butter in the skillet until it turns a nutty brown before adding the beets. If the beets seem dry while frying, add a little more butter to the skillet. Beets can be roasted instead of boiled. Wrap in foil and roast at 400°F (200°C) for about 45-60 minutes, or until tender.
