Dress the Salad: Drizzle the chili oil and rice vinegar over the cucumber and cantaloupe. Sprinkle with salt and sugar. (Mix time: 2 minutes)

Combine: Gently toss the ingredients together until the cucumber and cantaloupe are evenly coated with the dressing. Taste and adjust seasonings as needed, adding more sugar, salt, chili oil, or rice vinegar to your preference. (Mix time: 3 minutes)

If you don't have rice vinegar, white wine vinegar or a squeeze of lime juice can be used as a substitute.
Toast the sesame seeds in a dry pan over medium heat for 2-3 minutes, or until golden brown and fragrant, being careful not to burn them.
