For an even richer flavor, consider using shrimp stock or fish stock instead of water when dissolving the bouillon. If you prefer a smoother bisque, use an immersion blender to puree a portion of the soup before adding the remaining cream and wine. To prevent the crab meat from becoming rubbery, add it towards the end of the cooking process. A squeeze of lemon juice can brighten the flavors of the bisque.
