For a richer flavor, consider browning the onion and bell peppers in a skillet before adding them to the slow cooker. If you prefer a thicker chili, you can mash some of the cannellini beans before adding them to the slow cooker. Serve with your favorite toppings such as shredded cheese, sour cream, avocado, cilantro, or tortilla chips. This chili is even better the next day, as the flavors have more time to develop.
