Follow The Directions

01

Step
5 mins

Combine all ingredients in a 6-quart or larger slow cooker. (5 minutes)

02

Step
3 mins

Stir well to ensure everything is evenly distributed and coated in the salsa verde and tomato puree. (2 minutes)

03

Step
2 hrs

Cover and cook on High for 2 hours, stirring occasionally to prevent sticking. (2 hours)

04

Step
2 hrs

Reduce heat to Low and continue to simmer for at least 2 hours, or up to 4 hours, allowing the flavors to meld and deepen. Stir occasionally. (2-4 hours)

05

Step

Taste and adjust seasonings as needed, adding more salt, pepper, or cayenne pepper to your preference. (2 minutes)

For a richer flavor, consider browning the onion and bell peppers in a skillet before adding them to the slow cooker.
If you prefer a thicker chili, you can mash some of the cannellini beans before adding them to the slow cooker.
Serve with your favorite toppings such as shredded cheese, sour cream, avocado, cilantro, or tortilla chips.
This chili is even better the next day, as the flavors have more time to develop.

I found that the cayenne pepper was a bit too much for my family, so I reduced it to 1/2 teaspoon and it was perfect.

The slow cooker makes the chicken so tender. I will definitely make this again.
