Heat olive oil in a large skillet over medium heat. Add bacon and cook, stirring occasionally, until crisp and the fat is rendered, about 5-7 minutes. Remove the bacon with a slotted spoon and set aside. Reserve the bacon fat in a small bowl, keeping the skillet unwashed.

Bring a large pot of lightly salted water to a boil.

In a mixing bowl, combine the grated Parmesan cheese, eggs, egg yolk, and 1/8 teaspoon of black pepper.

Cook the elbow macaroni in the boiling water, stirring occasionally, until al dente, about 8 minutes. Drain the pasta into a colander set over a large, heatproof bowl. Reserve 1 cup of the pasta cooking water, discarding the rest, and keep the heated bowl in place.

Return 1 teaspoon of the reserved bacon fat to the large skillet over medium heat. Add the minced garlic and cook until fragrant, about 30 seconds. Add the halved cherry tomatoes and cook, stirring occasionally, until heated through but still intact, about 5 minutes. Stir in the fresh spinach until wilted.

Add the cooked bacon, tomato mixture, and pasta to the heated bowl. Whisk 1/2 cup of the reserved cooking water into the egg and cheese mixture. Pour this over the pasta mixture in the bowl and toss for 3 minutes, ensuring everything is well coated. If the sauce is too thick, thin it with additional reserved cooking water. Season with salt and pepper to taste. Serve immediately, garnished with additional Parmesan cheese.

Ensure all your ingredients are prepped and ready to go before you start cooking, as the dish comes together quickly.
Don't overcook the tomatoes; they should retain their shape and burst with flavor when bitten into.
Use high-quality Parmesan cheese for the best flavor and texture.
If you don't have whole wheat elbow macaroni, you can use regular elbow macaroni or another short pasta shape.
