Mix with your hands until thoroughly combined, ensuring every slice is coated. Cover tightly with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld. (10 minutes)

When ready to cook, preheat a charcoal grill for medium-high heat and lightly oil the grate to prevent sticking. (10 minutes)

Weave the pork slices onto the metal skewers, folding any longer pieces in half as needed; press the slices snugly together to create compact skewers. (15 minutes)

Cook the skewers on the preheated grill, turning frequently to ensure even browning, until the pork is no longer pink in the center and nicely charred on the outside, about 30 minutes. (30 minutes)

Brush the skewers generously with your favorite barbecue sauce and continue to turn them frequently, allowing the sauce to caramelize and create a sticky, flavorful glaze, about 10 minutes more. An instant-read thermometer inserted into the center of a skewer should read at least 160 degrees F (71 degrees C). (10 minutes)

For best results, marinate the pork overnight. This allows the flavors to fully penetrate the meat, resulting in a more flavorful and tender skewer.
Feel free to experiment with different barbecue sauces to find your favorite flavor profile. A smoky, sweet, or spicy sauce all work well with pork.
If you don't have a charcoal grill, you can also cook these skewers on a gas grill or under the broiler. Adjust cooking times accordingly.
