Roll Out the Crust: On a lightly floured surface, roll out the dough into two 10-inch circles.

Prepare the Filling: In a saucepan, combine brown sugar, 1/2 cup vegan margarine, 1/4 cup white sugar, rice milk, 3 tablespoons flour, cinnamon, and nutmeg. Cook over medium heat, stirring constantly, until the margarine is melted and the sugar is dissolved. (3-5 minutes)

Combine Apples and Sauce: In a large bowl, place the apple slices. Pour the brown sugar mixture over the apples and toss to coat evenly.

Assemble the Pie: Gently press one crust into a 9-inch pie plate. Pile the apple mixture into the bottom crust. Cover with the second crust. Cut several slits in the top crust to allow steam to escape.

For the flakiest crust, ensure the vegan margarine is very cold before using.
Feel free to use a mix of apple varieties for a more complex flavor profile.
If the crust begins to brown too quickly, tent the pie with foil during the last 15-20 minutes of baking.
