Follow The Directions

01

Step

Preheat your grill to high heat, ensuring a sizzling surface for cooking. Alternatively, preheat your oven to 400°F (200°C).

02

Step

In a small bowl, whisk together the melted butter, grated Parmesan cheese, dried basil, and dried oregano. Season generously with kosher salt and freshly ground black pepper. (5 minutes)

03

Step

Divide the zucchini rounds evenly among 3 or 4 sheets of heavy-duty aluminum foil. Spoon the butter mixture generously over the zucchini, ensuring each piece is well-coated.

04

Step

Bring up the sides of the foil sheets and create a tight, double-folded seal along the top and ends of each packet. This will trap the steam and allow the zucchini to cook evenly. Leave a little room inside each packet for air circulation.

05

Step

If grilling, place the foil packets directly on the preheated grill grates. If baking, arrange the packets on a baking sheet and place in the preheated oven. Cook until the zucchini is tender and just cooked through, approximately 15-20 minutes.

06

Step

Carefully open the foil packets (beware of escaping steam!). Garnish generously with fresh chopped parsley before serving.

For an extra layer of flavor, consider adding a clove of minced garlic or a pinch of red pepper flakes to the butter mixture.
Feel free to experiment with other herbs and spices! Thyme, rosemary, or a sprinkle of Italian seasoning would also be delicious.
If you don't have fresh parsley, dried parsley can be used, but fresh is always preferred for its brighter flavor.
These foil packets can also be prepared ahead of time and stored in the refrigerator until ready to cook. Just be sure to add the parsley after cooking to maintain its freshness.
