Follow The Directions

01

Step

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x9-inch baking pan. (5 minutes)

02

Step

In a large bowl, whisk together 1 1/4 cups flour, 1/2 cup granulated sugar, baking powder, baking soda, and salt. Stir in 1/2 cup melted butter, milk, egg, and vanilla extract until just combined. Pour batter into the prepared pan. (10 minutes)

03

Step

In a separate bowl, combine 1/2 cup flour, 1/4 cup granulated sugar, and 3 tablespoons melted butter using a fork or your fingers until the mixture resembles coarse crumbs. Sprinkle half of the crumb topping evenly over the batter in the pan. (7 minutes)

04

Step

In a small bowl, stir together blueberry pie filling and lemon extract. Spread the blueberry mixture evenly over the crumb topping. Sprinkle fresh blueberries over the pie filling, then top with the remaining crumb topping. (5 minutes)

05

Step

Bake in the preheated oven until the cake is golden brown and a toothpick inserted into the center comes out clean, about 1 hour. Let cool slightly before serving. (60 minutes)

For an extra layer of flavor, try adding a sprinkle of cinnamon to the crumb topping.
If you don't have fresh blueberries, you can use frozen ones. Just be sure to thaw them slightly and pat them dry before adding them to the cake.
This cake is best served warm, but it can also be stored in an airtight container at room temperature for up to 2 days.
