In a medium saucepan, combine water and brown rice. Bring to a boil over high heat, then reduce heat to low, cover, and simmer until rice is tender and water is absorbed, approximately 35-40 minutes. Drain any excess water.

While the rice is cooking, prepare the green beans. In a separate saucepan, set up a steamer insert. Add water to just below the bottom of the steamer. Bring the water to a boil over medium-high heat. Add the frozen green beans, cover, and steam until they are bright green and tender-crisp, about 5-7 minutes.

Heat olive oil in a large skillet or wok over medium-high heat. Add the steamed green beans and cooked rice to the skillet. Stir-fry for 6-8 minutes, or until the rice and green beans are lightly golden and slightly crisped, stirring frequently.

Remove from heat. Stir in the crumbled feta cheese. Drizzle with additional olive oil, if desired. Season generously with freshly ground black pepper to taste. Serve immediately.

For a richer flavor, try using toasted sesame oil instead of olive oil.
Add a clove of minced garlic or a small knob of grated ginger to the skillet along with the green beans and rice for an extra layer of flavor.
Feel free to experiment with other vegetables, such as chopped bell peppers, mushrooms, or broccoli.
A squeeze of fresh lemon juice at the end brightens up the flavors.
