For a richer flavor, consider adding a touch of smoked paprika to the hearts of palm before roasting. Fresh tarragon or parsley can be used in place of, or in addition to, the dill for a brighter, herbaceous note. If you don't have sandwich rolls, brioche buns or even toasted sourdough slices can work beautifully. Adjust the amount of lemon juice and zest to your preference for acidity. To ensure the hearts of palm get a nice golden color, spread them out in a single layer on the baking pan.
