Pat hearts of palm dry and place in a medium bowl. Toss with avocado oil and coat with seafood seasoning; season with salt and pepper. Transfer to a baking pan. (5 minutes)

Stir together vegan mayonnaise, celery, shallot, lemon zest, juice of 1/4 lemon, capers, dill, and sesame seeds in a large bowl until well combined; season with salt. Add roasted hearts of palm and toss to coat. (10 minutes)

Brush the tops of sandwich rolls with olive oil. Toast in a large skillet over medium-high heat until lightly browned, about 1 minute. (2 minutes)

For a richer flavor, consider adding a touch of smoked paprika to the hearts of palm before roasting.
Fresh tarragon or parsley can be used in place of, or in addition to, the dill for a brighter, herbaceous note.
If you don't have sandwich rolls, brioche buns or even toasted sourdough slices can work beautifully.
Adjust the amount of lemon juice and zest to your preference for acidity.
To ensure the hearts of palm get a nice golden color, spread them out in a single layer on the baking pan.
