Increase the heat to medium and bring the soup to a gentle boil, stirring constantly. Reduce the heat to low, cover, and simmer until the soup has thickened slightly, about 5 minutes.

While the soup is simmering, prepare the dumplings: In a large bowl, whisk together the 1.5 cups of flour, parsley, baking powder, salt, and poultry seasoning. In a separate bowl, whisk together the milk and egg. Pour the egg mixture into the flour mixture and stir gently until just moistened. Do not overmix; a few lumps are fine.

Drop spoonfuls of the dumpling batter into the simmering soup. Cover the pot tightly and simmer until the dumplings are cooked through and a toothpick inserted into the center of several dumplings comes out clean, about 15-20 minutes. For a richer flavor, use homemade turkey stock instead of water and consommé.
Add other vegetables such as potatoes, corn, or peas for added heartiness.
If you don't have poultry seasoning, you can use a blend of sage, thyme, rosemary, and marjoram.
For lighter dumplings, use cake flour instead of all-purpose flour.
Be careful not to overmix the dumpling batter, as this will result in tough dumplings.
