Follow The Directions

01

Step

Preheat your oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking pan meticulously to prevent sticking. (5 minutes)

02

Step

In a medium bowl, whisk together the whole wheat flour, cocoa powder, baking soda, and salt until evenly combined. Set aside this dry mixture. (2 minutes)

03

Step

Place the drained silken tofu in a high-speed blender. Cover and blend until completely smooth and creamy. Add the sugar and olive oil to the blended tofu; continue to blend for approximately 1 minute until the mixture is light and emulsified. Pour the mixture into a large mixing bowl and stir in the vanilla extract. (7 minutes)

04

Step

In a double boiler, gently melt the chopped bittersweet chocolate squares over simmering water. Stir frequently with a rubber spatula, ensuring to scrape down the sides to prevent burning, until the chocolate is completely melted and glossy. Carefully pour the melted chocolate into the tofu mixture and stir until well combined. Gradually incorporate the flour mixture into the wet ingredients, stirring until just combined, being careful not to overmix (about 3 minutes). Gently fold in the dark chocolate chips, distributing them evenly throughout the batter. Transfer the brownie batter to the prepared baking pan, spreading it evenly to the corners. (15 minutes)

05

Step

Bake in the preheated oven for approximately 30 minutes, or until a toothpick inserted into the center comes out clean with moist crumbs attached. Remove the pan from the oven and allow the brownies to cool completely in the pan before slicing into bars. This cooling period is crucial for the brownies to set properly and develop their fudgy texture. (60 minutes cooling)

For an extra layer of flavor, consider adding a teaspoon of instant espresso powder to the dry ingredients.
Be sure to use silken tofu, not firm or extra-firm, for the correct texture.
Do not overbake the brownies! They should be slightly soft in the center when removed from the oven. They will continue to set as they cool.
Store leftover brownies in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 5 days.
