Using a pastry blender or your fingertips, cut in the cold butter into the flour mixture until the mixture resembles coarse crumbs. Work quickly to keep the butter cold. (5 minutes)

Gradually stir in the cold buttermilk with a fork until just combined. Be careful not to overmix; the dough should be slightly shaggy. Knead the dough gently about 5 times directly in the bowl. (3 minutes)

Turn the dough out onto a lightly floured surface. With floured hands, gently knead the dough 8 to 10 times, just until it comes together. Shape the dough into a round loaf, about 6 to 8 inches in diameter. (5 minutes)

Place the loaf on the prepared baking sheet. Dust the top of the loaf with about 1 teaspoon of flour. Using a serrated knife, cut a deep 'X' across the top of the loaf, about 1/2 inch deep. This helps the bread bake evenly. (2 minutes)

Bake in the preheated oven until the bread is golden brown, sounds hollow when the top is tapped, and an internal temperature of 190 degrees F (88 degrees C) is reached, about 45 to 50 minutes. (50 minutes)

For best results, use cold ingredients, especially the butter and buttermilk. This helps create a tender crumb.
Do not overmix the dough! Overmixing will develop the gluten and result in a tough bread.
If you don't have buttermilk, you can make a substitute by adding 1 tablespoon of lemon juice or white vinegar to 1 1/4 cups of milk. Let it sit for 5 minutes before using.
The 'X' cut on top is not just for looks; it helps the bread cook evenly and prevents it from cracking unpredictably.
Feel free to add 1/2 cup of raisins or currants to the dough for a more traditional Irish soda bread.
