Pre-cook the Crust (5-7 minutes per tart): On a well-floured surface, roll out one ball of pizza dough into a thin, 10- to 12-inch circle. Transfer to a cold cast iron pan and heat over medium-high heat. As the dough heats and bubbles appear, deflate them with the tines of a fork to ensure a thin, crisp crust. Cook until the bottom is nicely browned and almost charred. Repeat with the remaining dough.

Assemble and Broil (5-6 minutes per tart): Spread a generous amount of the cheese mixture evenly over each crust. Top with the sautéed onions and cooked bacon. Broil for 5 to 6 minutes, or until the edges are browned and starting to lift.

For an extra layer of flavor, consider adding a sprinkle of Gruyère cheese before broiling.
If you don't have fromage blanc, you can substitute with ricotta cheese or a mixture of cream cheese and sour cream.
Feel free to experiment with other toppings, such as mushrooms, garlic, or herbs.
Keep a close watch while broiling, as the tartes can burn quickly.
