For a deeper flavor, marinate the chicken in a mixture of rice wine and a little sesame oil for at least 30 minutes before cooking.
Adjust the amount of ginger according to your preference. More ginger will result in a spicier stew.
If you can't find somen noodles, thin spaghetti or angel hair pasta can be used as a substitute, although the texture will be slightly different.
