Follow The Directions

01

Step

Preheat oven to 400 degrees F (200 degrees C). (5 minutes)

02

Step

Pierce sweet potatoes all over with a fork. (2 minutes)

03

Step

Roast sweet potatoes in the preheated oven until soft, about 45 minutes. Let cool slightly. (45 minutes)

04

Step

Cut sweet potatoes in half lengthwise. (2 minutes)

05

Step

In a blender or food processor, combine garbanzo beans and olive oil. Pulse several times to mash. (3 minutes)

06

Step

Scoop the flesh from the sweet potato skins and add to the blender. Pulse to combine. (5 minutes)

07

Step

Add tahini, lemon juice, lemon zest, cumin, coriander, white pepper, and sea salt. Blend until smooth and creamy, adding reserved garbanzo bean liquid as needed to achieve the desired consistency. (5 minutes)

For a smokier flavor, try roasting the sweet potatoes on a grill or using smoked paprika in the hummus.
Garnish with a drizzle of olive oil, a sprinkle of paprika, or chopped fresh cilantro for an extra touch of elegance.
Serve with pita bread, crackers, or an assortment of fresh vegetables for dipping.
