For a richer flavor, soak the mincemeat in a tablespoon of brandy or rum for an hour before adding it to the batter.
If you don't have a lidded pudding mold, you can use a heatproof bowl covered tightly with a double layer of aluminum foil. Ensure the foil is tightly sealed to prevent water from seeping in.
The pudding can be made ahead of time and stored in the refrigerator for up to 3 days. Reheat gently in a steamer or microwave before serving.
Leftover pudding is delicious served cold with a dollop of whipped cream or custard.
