While the pasta is cooking, cook the bacon in a large skillet over medium heat until crispy, about 8-10 minutes. Remove the bacon with a slotted spoon and drain on paper towels. Crumble the bacon into bite-sized pieces and set aside. (Total time: 10 minutes)

In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined. Set aside. (Total time: 2 minutes)

In the same skillet used to cook the bacon (with the bacon fat still in it), heat the avocado oil over medium heat. Add the cooked spaghetti, egg mixture, thawed peas, and minced garlic to the skillet. (Total time: 3 minutes)

Cook, stirring constantly, until the egg mixture thickens and coats the spaghetti, about 5-7 minutes. If the sauce becomes too thick, add a little of the reserved pasta water to loosen it. (Total time: 7 minutes)

Remove the skillet from the heat and stir in the crumbled bacon and Parmesan cheese. (Total time: 2 minutes)

Serve immediately, garnished with additional Parmesan cheese and fresh parsley.

For a richer flavor, use pancetta instead of bacon.
If you don't have avocado oil, olive oil works well too.
Adding a pinch of red pepper flakes to the egg mixture will give the dish a little heat.
Freshly grated Parmesan cheese is highly recommended for the best flavor.
Don't overcook the pasta! Al dente is key to a great texture.
