For a vegetarian version, omit the sausage and add a can of drained and rinsed cannellini beans along with the chickpeas. Spice it up! Add a pinch of red pepper flakes or a dash of hot sauce for extra heat. If you don't have fresh kale or spinach, you can use frozen. Add it directly to the soup in the last few minutes of cooking. The soup tastes even better the next day as the flavors meld together. Store leftovers in an airtight container in the refrigerator for up to 3 days.
