For a vegetarian option, omit the bacon and use 1 tablespoon of olive oil in its place. You can also add a pinch of red pepper flakes for a touch of heat.
Feel free to substitute other vegetables based on your preference and what's in season. Yellow squash, eggplant, or even corn would be great additions.
For a richer flavor, use smoked bacon instead of regular bacon.
