Once the cauliflower is tender, gradually add the milk-flour mixture to the pot, stirring continuously to prevent clumping. Simmer, stirring occasionally, until the soup has thickened to your desired consistency, about 5 minutes.

For an even smoother soup, use an immersion blender to partially or fully puree the soup before adding the cheese. Be careful when blending hot liquids.
