Return the reserved sausage mixture to the skillet. Stir in the ketchup mixture, then season with salt and pepper to taste. (2 minutes)

Cook, stirring frequently, until the hash is nicely browned and heated through, about 5 minutes longer. (5 minutes)

For an extra layer of flavor, consider adding a splash of apple cider vinegar to the hash during the last few minutes of cooking.
If you prefer a sweeter hash, use a sweeter variety of apple, such as Honeycrisp or Fuji.
Serve with a fried or poached egg on top for a complete and satisfying meal.
The recipe can be prepared to this point up to 2 hours ahead. Spread hot potatoes on a large lipped cookie sheet; cover when cool. Return skillet to medium-high; add potatoes and re-crisp.
