Follow The Directions

01

Step

**Prepare the Rosemary-Ginger Simple Syrup:** In a small saucepan, combine sugar, water, rosemary leaves, ginger, and black pepper.

02

Step

Bring to a boil over medium heat, stirring constantly until sugar is completely dissolved. (Approximately 1 minute)

03

Step

Remove from heat, cover, and let steep at room temperature for 1 hour to allow flavors to meld.

04

Step

Strain the syrup through a fine-mesh sieve, pressing down on the solids to extract maximum flavor. Discard solids. Refrigerate until ready to use.

05

Step

**Assemble the Cocktail:** In a cocktail shaker, combine gin, 1 cup of the rosemary-ginger simple syrup, sparkling water, and lime juice.

06

Step

Add ice cubes to the shaker. Seal tightly and shake vigorously until well-chilled. (Approximately 15-20 seconds)

07

Step

Strain approximately 3/4 cup of the mixture into each of 8 glasses filled with ice.

08

Step

Garnish with a sprig of rosemary or a slice of ginger (optional). Serve immediately.

For a stronger ginger flavor, use a microplane to grate some of the ginger before adding it to the syrup.
Adjust the amount of simple syrup to your preference. If you like a sweeter cocktail, add a bit more. For a tarter cocktail, reduce the amount.
Feel free to experiment with different types of gin. A London Dry gin will provide a classic flavor, while a more floral gin will complement the rosemary.
The simple syrup can be made ahead of time and stored in the refrigerator for up to a week.
