Preheat the oven to 400 degrees F (200 degrees C). Grease 8 cups of a muffin tin with cooking spray. (5 minutes)

Finely chop cherry tomatoes and drain any excess liquid; set aside. (5 minutes)

Unroll pizza crust on a lightly floured work surface and roll out thinly into a large rectangle. Using a 4-inch round cookie or biscuit cutter, cut out 8 circles in dough. (10 minutes)

Place dough circles in the prepared muffin cups, gently pressing the dough into the bottom and up the sides of each cup. (5 minutes)

Add 1 teaspoon of mozzarella cheese into each cup. Top with 1 tablespoon of pizza sauce, followed by the chopped tomatoes and red onions. (5 minutes)

Sprinkle the remaining mozzarella cheese evenly into each cup, and top with pepperoni. Season with Italian seasoning, red pepper flakes, and garlic salt to taste. (5 minutes)

Bake in the preheated oven until the cheese is bubbling and melted, approximately 14 to 15 minutes. (15 minutes)

Remove from the oven and let cool in the muffin tins for about 5 minutes before carefully removing the pizza cupcakes. (5 minutes)

Don't overfill the muffin cups, or the pizza cupcakes might overflow while baking.
Feel free to experiment with different toppings such as cooked ham, sausage, bell peppers, mushrooms, or olives to create your own signature pizza cupcake.
For a crispy crust, pre-bake the dough circles for 5 minutes before adding the toppings.
