Step

Place beets in a large pot and cover with cold water. Bring to a boil over high heat, then reduce heat to medium-low and simmer until beets are tender when pierced with a fork, approximately 1 hour.

Drain the beets and let them cool until you can handle them comfortably. Peel the beets and cut them into cubes. Place in a bowl and refrigerate to chill, about 15 minutes.

In a large bowl, whisk together the lemon juice, olive oil, balsamic vinegar, Dijon mustard, salt, pepper, and garlic salt until well combined and emulsified.

Add the chilled beets, tomatoes, red onion, avocado, and feta cheese to the bowl with the dressing. Gently toss to coat all the ingredients.

Add the baby spinach leaves to the salad bowl and gently toss everything together until the spinach is evenly distributed.

For a sweeter salad, try roasting the beets instead of boiling them. Preheat your oven to 400°F (200°C), wrap the beets in foil, and roast for 45-60 minutes, or until tender.
If you don't have balsamic vinegar, you can substitute red wine vinegar or apple cider vinegar.
Feel free to add other ingredients to this salad, such as toasted nuts, grilled chicken, or hard-boiled eggs.
This salad is best served immediately, but it can be stored in the refrigerator for up to 24 hours. Add the avocado just before serving to prevent browning.
