However, you can also use boneless, skinless chicken breasts if preferred, but be sure to adjust the cooking time accordingly. Don't overcrowd the skillet when searing the chicken. If necessary, sear the chicken in batches to ensure even browning. Feel free to substitute other vegetables, such as parsnips, sweet potatoes, or Brussels sprouts, based on your preference and what's in season. If you don't have an oven-safe skillet, you can transfer the vegetables and chicken to a baking dish after searing.
