In a large mixing bowl, combine the sugar, instant coffee powder, cocoa powder, vanilla extract, coffee liqueur, and heavy cream. Whisk or use an electric mixer to beat until the mixture thickens slightly, but before soft peaks form (about 3-5 minutes).

Add the softened mascarpone cheese to the bowl. Beat until stiff peaks form (about 1-2 minutes). Be careful not to overmix, as the cream can separate if mixed too much. Refrigerate the mocha cream until ready to assemble.

Optionally, line the bottom of a 9-inch springform pan with a parchment paper round for easier removal.

Arrange 8 cookies on the bottom of the springform pan, covering as much surface area as possible. Break a 9th cookie into smaller pieces and use these to fill in any gaps (about 5-10 minutes).

Spread approximately 1/4 of the mocha cream evenly over the cookie layer.

Add another layer of cookies, pressing them lightly into the cream filling. Spread another 1/4 of the mocha mixture evenly over the cookies.

Repeat the layering process with the remaining cookies and mocha cream, finishing with a layer of cookies. You should have a total of 5 cookie layers and 4 filling layers (about 20-30 minutes).

Wrap the springform pan tightly with plastic wrap and chill in the refrigerator for at least 12 hours, or preferably 24 hours, to allow the cookies to soften and the flavors to meld.

When ready to serve, run a thin knife around the inside edge of the springform pan to loosen the cake. Release the spring and gently remove the ring. Slice and serve chilled.

For an even more intense mocha flavor, consider using a high-quality dark cocoa powder.
If you don't have coffee liqueur, you can substitute with additional strong brewed coffee or espresso.
Feel free to experiment with different types of chocolate chip cookies, such as those with nuts or sea salt, to add your own twist.
Make sure your mascarpone cheese is softened for a smoother mousse.
