Heat the olive oil and butter in a large skillet over medium-high heat. Add the eggplant and red onion and cook until softened and lightly browned, about 5-10 minutes. Season with salt and pepper, then transfer to a 9x13 inch baking dish. (12 minutes)

In the same skillet, cook the zucchini and red bell pepper until softened, about 5 minutes. Season with salt and pepper, and add to the baking dish with the eggplant mixture. (8 minutes)

If needed, add a bit more olive oil to the skillet. Brown the chicken slices on both sides, about 5 minutes total. Transfer the chicken to the baking dish, nestling it amongst the vegetables. (8 minutes)

Pour the diced tomatoes into the skillet. Stir in the reserved flour mixture and dill paste. Bring to a simmer, then remove from heat and pour evenly over the chicken and vegetables in the baking dish. (5 minutes)

Sprinkle the crumbled feta cheese over the top. (2 minutes)

Bake in the preheated oven until the dish is bubbly and the chicken is cooked through, about 30-40 minutes. (40 minutes)

For a richer flavor, marinate the chicken in a mixture of olive oil, lemon juice, garlic, and herbs for at least 30 minutes before cooking.
Feel free to substitute other vegetables, such as mushrooms, yellow bell peppers, or cherry tomatoes, based on your preferences.
If you don't have dill paste, you can use 1 tablespoon of dried dill or 3 tablespoons of chopped fresh dill.
Serve this medley with a side of couscous, quinoa, or crusty bread to soak up the delicious sauce.
