Combine Ingredients: In a slow cooker, combine the chicken, kidney beans (with half their liquid), black beans (with half their liquid), onion, green pepper, tomato paste, stewed tomatoes, mango salsa, rice vinegar, bay leaf, smoked paprika, salt, chili powder, and black pepper. Stir well to ensure all ingredients are evenly distributed. (5 minutes)

High Heat Cook: Cover the slow cooker and set it to High. Cook for 1 hour, then stir the chili to prevent sticking and ensure even cooking. (1 hour)

Low Heat Simmer: Reduce the heat to Low, cover, and continue to cook for 3 to 4 hours, or until the chicken is tender and the flavors have melded together beautifully. (3-4 hours)

Serve: Remove the bay leaf before serving. Garnish with your favorite toppings, such as shredded cheese, sour cream, or crushed corn chips.

For a spicier kick, add a pinch of cayenne pepper or a finely chopped jalapeño to the slow cooker.
If you don't have mango salsa, you can substitute with a diced mango and a dash of your favorite hot sauce.
This chili is even better the next day, as the flavors continue to develop overnight.
