Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium casserole dish. (5 minutes)

Heat the oil in a skillet over medium heat. Place chicken in skillet, and cook 10 minutes, or until juices run clear. Drain, and transfer to the prepared casserole dish. (15 minutes)

In a large bowl, gently mix the cooked chicken with mayonnaise, water chestnuts, pimentos, almonds, celery seed, and lemon juice. Season with garlic salt to taste. (5 minutes)

Transfer the chicken mixture to the prepared casserole dish. Layer evenly with shredded Cheddar cheese, and then top generously with French-fried onion rings. (5 minutes)

Bake in the preheated oven for 30 minutes, or until the cheese is melted, bubbly, and the onion rings are golden brown. (30 minutes)

For a richer flavor, use full-fat mayonnaise.
Toast the almonds lightly in a dry pan before adding them to the casserole for enhanced flavor and texture.
If the onion rings start to brown too quickly, tent the casserole dish with aluminum foil during the last 10-15 minutes of baking. Watch carefully to prevent burning.
Feel free to experiment with different cheeses. Monterey Jack, Colby, or a blend of cheddar and mozzarella would also be delicious.
