If you don't have fines herbes, you can substitute with a mix of your favorite dried herbs, such as thyme, rosemary, and oregano.
Adjust the amount of honey to your liking, depending on your preferred level of sweetness.
Marinating for longer than 24 hours can sometimes make the beef too soft, so keep an eye on the marinating time.
