While the pasta is cooking, heat olive oil in a large, heavy-bottomed skillet over medium heat. Add chopped onion, jalapeno pepper, and diced green bell pepper. Saute until the onion becomes soft and translucent, about 5-7 minutes. (10 minutes)

Stir in the diced tomatoes, red wine, and chopped Kalamata olives. Bring the sauce to a simmer and cook for 15 minutes, allowing the flavors to meld and deepen. (20 minutes)

Add the cooked and drained rotini pasta to the skillet with the tomato sauce. Toss gently but thoroughly until the pasta is evenly coated. (5 minutes)

Pour the pasta mixture into a 9x13 inch baking dish, spreading it out evenly.

Sprinkle the crumbled feta cheese and shredded Cheddar cheese evenly over the top of the pasta.

Bake in the preheated oven for 5 minutes, then switch the oven to the broiler setting.

Broil for an additional 5 minutes, or until the cheese topping is melted, golden brown, and bubbly. Watch carefully to prevent burning. (10 minutes)

For an extra layer of flavor, consider adding a pinch of dried oregano or basil to the tomato sauce during the simmering process.
If you prefer a spicier dish, leave the seeds in the jalapeno pepper or add a pinch of red pepper flakes.
Feel free to experiment with different types of cheese! Gruyere or mozzarella would also be delicious in this melt.
This dish can be assembled ahead of time and baked just before serving. If assembling ahead, add a few extra minutes to the baking time.
