Follow The Directions

Step

Place the chicken carcass into your Instant Pot. Add the carrots, celery, onion, garlic, apple cider vinegar, salt, peppercorns, and bay leaf. Pour in the water. (Prep time: 15 minutes)

Close and lock the lid of the Instant Pot. Select the high-pressure setting and set the timer for 180 minutes (3 hours). Allow approximately 30 minutes for the pressure to build inside the pot. (Cook time: 3 hours, Pressure build time: 30 minutes)

Once the cooking time is complete, allow the pressure to release naturally (about 30 minutes). Unlock and carefully remove the lid. Let the broth cool slightly for about 20 minutes. (Pressure release: 30 minutes, Cooling: 20 minutes)

Pour the broth through a fine-mesh strainer lined with cheesecloth (if desired) to remove all solids. Discard the solids. (Strain time: 10 minutes)

Allow the broth to cool completely before transferring it to airtight containers. Refrigerate for up to 3 days or freeze for up to 6 months. (Cooling time: Varies)

For an even richer flavor, roast the chicken carcass in the oven at 400°F (200°C) for 20 minutes before adding it to the Instant Pot.
You can add other vegetables like mushroom stems, leek greens, or parsley stems for added depth of flavor.
If you don't have apple cider vinegar, you can substitute with white vinegar or lemon juice. The acid helps to extract minerals from the bones.
For a clearer broth, avoid stirring the ingredients while they are cooking.
Be sure to let the pressure release naturally for the best flavor extraction. A quick release can result in a cloudy broth.
