Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper. (5 minutes)

Wash beets thoroughly. Cut into 1-inch chunks. Toss with olive oil and salt. Spread in a single layer on the prepared baking sheet. (10 minutes)

For more flavor, add a sprig of fresh thyme to the baking sheet during roasting.
Balsamic vinegar would also pair well with these beets.
To peel beets, boil them first until tender, then the skins should easily slip off.
