For a richer, more caramel-like flavor, consider using dark brown sugar instead of light brown sugar. Watch the mixture carefully as it simmers, as it can easily burn if the heat is too high or it is not stirred frequently enough. If you find the mixture is not thickening sufficiently, you can add a small amount (1/2 teaspoon) of cornstarch mixed with 1 tablespoon of cold water to the simmering mixture. Stir well to combine and continue to simmer until thickened. This recipe can be easily doubled or tripled if needed. Just be sure to use a larger saucepan to prevent boil-over.
