In a mason jar or small bowl, combine the reduced-sodium soy sauce, rice vinegar, grated fresh ginger, minced garlic, white sugar, toasted sesame oil, gochujang, thinly sliced green onion, and toasted sesame seeds. (2 minutes)

If using a mason jar, seal the lid tightly and shake vigorously until the sugar is completely dissolved. If using a bowl, whisk all ingredients together until the sugar is fully incorporated. (3 minutes)

Taste and adjust the seasonings as needed. For a spicier sauce, add a pinch more gochujang or a dash of red pepper flakes. For a sweeter sauce, add a touch more sugar. (2 minutes)

Allow the sauce to rest for at least 15 minutes to allow the flavors to meld together. This will enhance the overall taste and complexity. (15 minutes)

Serve immediately with your favorite potstickers, dumplings, spring rolls, or grilled meats. Garnish with additional green onion and sesame seeds, if desired.

For a deeper, more complex flavor, try using dark soy sauce instead of reduced-sodium soy sauce. However, be mindful of the salt content and adjust accordingly.
If you don't have fresh ginger on hand, you can substitute with 1/2 teaspoon of ground ginger, but the flavor will be less vibrant.
Gochujang can vary in spice level, so start with a smaller amount and adjust to your preference.
This sauce can be stored in an airtight container in the refrigerator for up to 3 days. The flavors may intensify over time.
