Preheat the oven to 375 degrees F (190 degrees C).

Cut butternut squash in half, lengthwise. Scoop out and discard seeds. Brush the cut side of squash with 1 teaspoon of olive oil. Place cut-side down onto a baking sheet and cover with aluminum foil.

Bake in the preheated oven until tender, about 30 minutes. Remove from the oven and let cool for 5 to 10 minutes. Leave the oven on.

Heat 1 tablespoon of olive oil in a large sauté pan or skillet over medium-high heat. Cook and stir ground beef until browned and crumbly, about 10 minutes. Add diced onion, apple, and garlic. Continue to cook, stirring occasionally, until the fruit and vegetables are slightly soft, about 5 to 10 minutes more.

Turn the squash halves over and place them cut-side up onto the baking pan. Fill the centers of each squash half generously with the ground beef mixture. Dot each half with 1 tablespoon of butter and sprinkle with 1 tablespoon of brown sugar.

Bake, uncovered, in the preheated oven until the brown sugar is golden brown and bubbly, approximately 15 to 25 minutes. Remove squash from the oven and sprinkle each half with crumbled goat cheese. Serve immediately.

For a richer flavor, try using grass-fed ground beef.
Pecans or walnuts add a great textural contrast to the filling.
If you don't have goat cheese, feta or ricotta cheese are excellent substitutes.
Adjust the amount of brown sugar to your liking based on the sweetness of your apple and squash.
