Prepare the Pesto: In a food processor or blender, combine the fresh basil, Parmesan cheese, toasted pine nuts, and minced garlic. Process until a thick paste forms. Slowly drizzle in the extra-virgin olive oil while continuing to blend, until the pesto reaches your desired consistency. Season to taste with salt and freshly ground black pepper.

Prepare the Grill: Preheat your outdoor grill to medium-high heat. Lightly oil the grill grates to prevent sticking. Season the salmon fillet generously on both sides with salt and pepper.

Grill the Salmon: Place the salmon fillet, skin-side down, onto the preheated grill grates. Close the grill and cook until the salmon is about two-thirds cooked through. (Approximately 8-15 minutes, depending on the thickness of the fillet)

Add Pesto and Broil: Carefully remove the salmon from the grill using a spatula and transfer it to a baking sheet, skin-side down. Evenly spread the prepared pesto over the top of the salmon fillet.

Broil to Perfection: Position an oven rack about 6 inches from the broiler and preheat the broiler. Broil the salmon until the fish flakes easily with a fork and the pesto crust is bubbling and lightly browned. (Approximately 3-5 minutes).

Serve and Enjoy: Remove the salmon from the broiler and let it rest for a minute or two before serving. Garnish with fresh basil, if desired. Serve immediately.

For a richer pesto flavor, consider adding a small handful of spinach or kale to the basil mixture.
If you don't have a grill, you can bake the salmon in the oven at 375°F (190°C) for 12-15 minutes, then broil with the pesto crust as directed.
Leftover pesto can be stored in an airtight container in the refrigerator for up to 3 days, or frozen for longer storage.
