Gather all ingredients and prepare your workspace.

In a large pot, combine 2 tablespoons kosher salt, peppercorns, and the wine cork with water until it's 1/2 full. Bring to a vigorous boil over high heat. (Approximately 10 minutes)

Place the octopus on a cutting board. Using a wooden spoon or meat mallet, tenderize the octopus by pounding it multiple times, working from the center down each tentacle. (Approximately 5 minutes)

Dip the tentacles into the boiling water three times, holding them in for 2 to 3 seconds each time until they curl. Submerge the entire octopus in the boiling water. Return the water to a boil, then reduce the heat to low, cover, and simmer until the octopus is fork-tender. (45 to 60 minutes). Remove from heat and allow to cool in the broth for 30 minutes.

Preheat an outdoor grill to medium-high heat and lightly oil the grate. (Approximately 10 minutes)

Grill the octopus until nicely charred on all sides. (3 to 4 minutes per side)

Remove from the grill, slice into bite-sized pieces, and arrange on a serving platter. Drizzle generously with extra virgin olive oil, squeeze fresh lemon juice over the top, and sprinkle with minced parsley. Season to taste with salt and freshly ground black pepper. Serve immediately and enjoy the fresh, vibrant flavors.

The wine cork helps to tenderize the octopus during cooking, a traditional Mediterranean trick!
Don't overcook the octopus on the grill, as it can become tough. Look for a nice char and slightly firm texture.
Cooling the octopus in its cooking liquid helps it retain moisture and tenderness.
For an extra layer of flavor, consider adding a clove or two of smashed garlic to the boiling water.
Serve with a side of crusty bread to soak up the delicious juices.
